Instructions

  • Add the olive oil to a large heavy based pan
  • Chop your onion and sauté until translucent
  • Meanwhile peel and finely dice the remaining veg and then add to the pan alongside the tinned tomato, drained kidney beans and 1 cup of water
  • Simmer until the butternut squash has softened, you can cook for longer or cook in a slow cooker for a thicker stew.
  • ⁠2 minutes before serving roughly chop your baton into large croutons and grill for 1 minute, then add the grated cheese and grill for 1 more minute
