Ingredients You’ll Need
Here’s a list of everything you’ll need to make this Crispy Chickpeas recipe:
- 1 jar of high-quality chickpeas (giant chickpeas from Bold Bean Co. work brilliantly)
- Extra virgin olive oil
- 1 tsp cumin
- Sea salt
Why Chickpeas Deserve the Spotlight
Chickpeas might not seem like the most glamorous ingredient, but they’re absolute stars in the kitchen.
These humble legumes are nutrient powerhouses, packed with protein, fibre, and a range of vitamins and minerals.
Beyond their health benefits, they’re incredibly versatile.
From creamy hummus to hearty stews and now crispy snacks, there’s almost nothing these little guys can’t do.
And when you roast them, they transform into something completely magical—think crunchy exteriors and creamy centres, with a depth of flavour that’s hard to resist.
The Art of Choosing the Right Chickpeas
Not all chickpeas are created equal, and if you’ve never ventured beyond the tinned aisle, you’re in for a treat.
High-quality jarred chickpeas, like the ones from Bold Bean Co., are plumper, creamier, and have a more delicate flavour than their canned counterparts.
They’re worth the small splurge, especially for a recipe like this where the chickpeas are the star of the show.
Of course, if you’re using canned, don’t worry—you’ll still end up with a delicious snack.
Just remember to rinse and drain them well for the best results.
Why Roasting in Liquid Makes a Difference
The method of roasting chickpeas in their own broth might sound unusual, but it’s the secret to achieving the perfect texture.
The liquid keeps the insides buttery soft, while the high heat crisps up the outside.
It’s the best of both worlds—creamy and crunchy in one bite.
This technique also allows the flavours to infuse deeply into the chickpeas, giving you a snack that’s bursting with taste in every mouthful.
Don’t skip the final step of draining and crisping; it’s what takes these chickpeas from good to absolutely irresistible.

Creative Ways to Enjoy Crispy Chickpeas
Crispy chickpeas are much more than a snack.
They make an incredible salad topper, adding crunch and a hit of protein to leafy greens.
Sprinkle them over soups for a satisfying contrast to velvety broths.
They’re also a brilliant addition to grain bowls, tacos, or even as a garnish for roasted vegetables.
And if you’re entertaining, pop them in a bowl as a healthier alternative to crisps.

Flavour Variations to Try
One of the best things about this recipe is how easy it is to customise.
Stick with cumin and salt for a classic, earthy flavour, or take things up a notch with smoked paprika, garlic powder, or a pinch of cayenne for heat.
Fancy something herby? Toss the chickpeas with dried rosemary or thyme before roasting.
For a sweeter twist, mix in cinnamon and a drizzle of honey for the final 10 minutes in the oven.
The possibilities are endless, so don’t be afraid to experiment!
How to Make This Recipe
Step 1: Prep your chickpeas
Start by pouring the entire jar of chickpeas, including half the bean broth, onto a baking tray.
The broth is key here—it helps keep the chickpeas moist during the first stage of roasting.
If you’re using tinned chickpeas, you can substitute with a splash of vegetable stock.

Step 2: Add the seasoning
Drizzle 2 tablespoons of olive oil over the chickpeas, followed by 1 teaspoon of cumin and a generous sprinkle of sea salt.
Don’t hold back on the salt—it enhances the natural flavour of the chickpeas and the cumin.
Use your hands (or a spoon if you’re feeling fancy) to mix everything until the chickpeas are well coated.
Step 3: Roast to perfection
Pop the baking tray into a preheated oven at 180°C.
Roast the chickpeas for 30 minutes, giving them a stir halfway through to ensure they cook evenly.
At this point, the chickpeas should start developing that signature crunch, while the broth keeps the centres soft and creamy.
Step 4: Drain and finish crisping
Remove the tray from the oven and carefully drain off any remaining liquid.
This step is crucial—it helps the chickpeas crisp up fully.
Return the tray to the oven for another 10 minutes to achieve that golden, crunchy perfection.
Step 5: Cool and serve
Let the chickpeas cool slightly before tucking in.
They’ll crisp up even more as they cool, so be patient (or just go for it—I won’t judge).
Serve them as a snack, sprinkle them over your favourite dishes, or simply keep them in a jar on the counter for when hunger strikes.

Frequently Asked Questions
How long will crispy chickpeas stay crunchy?
Stored in an airtight container, they’ll stay crispy for a few days.
They’re best enjoyed fresh, but if you need to revive them, a quick blast in the oven will do the trick.
Can I use dried chickpeas instead of jarred or tinned?
Absolutely! Just make sure to soak and cook them beforehand.
The results will be just as delicious, though the process will take a bit longer.
What’s the best way to prevent soggy chickpeas?
Don’t skip the step of draining off the liquid before the final roast.
Overcrowding the tray can also lead to sogginess, so make sure the chickpeas are in a single layer with plenty of space between them.
Can I make these in an air fryer?
Yes! Air fryers are brilliant for this recipe.
Cook them at 180°C for around 20 minutes, shaking the basket halfway through.
You’ll still get that perfect crispy texture, and it’s a bit quicker than the oven method.
