Ingredients

  • 6 salad tomatoes
  • 1 baguette even slightly stale works perfectly

  • 2 tbsp olive oil
  • 400 g butterbeans 1 tin
  • Pinch sea salt

Instructions

  • Cut the baguette into diagonal slices, 1 inch thick, it doesn’t matter if the bread is stale
  • ⁠Brush with olive oil and grill or bake until golden and crispy – roughly 4 minutes at 180 or 2 minutes under the grill
  • Drain and ⁠empty the butterbeans into a saucepan and heat on a medium heat until warmed through
  • Transfer to a blender and add a pinch of salt and 15g chopped basil and blend until smooth
  • Wash and dice the tomato’s and add to a bowl with the olive oil, remaining chopped basil and a pinch of salt and mix well
  • Plate up the toast slices and add a dollop of butterbean mash and top with the chopped tomato and basil mix, add a drizzle of the oil from the tomato mix and serve
