Ingredients

  • Olive oil
  • 1 white onion
  • 2 carrots
  • ⁠⁠1 courgette
  • 3 celery stalks
  • 800 g chopped tomatoes 2 tins
  • 400 g green lentils tin, drained
  • 300 g spaghetti dry
  • salt and pepper to taste

Instructions

  • Add a generous splash of oil to a pan and heat
  • Finely dice your onion and fry in the oil until translucent
  • Wash and dice your carrot courgette and celery and add to the pan and cover for 5 minutes
  • Add the tomatoes and the lentils in their water, mix well and cover and simmer for 30 minutes
  • Remove 2 ladles of the sauce and blend until it makes a purée and add back into the sauce and mix well
  • Cook the spaghetti and add to the sauce, stir well and serve
